The fact of frying in a stainless steel pan

There're a number of misconceptions about frying in a stainless steel frying pan. For example lots of people think it needs the frying pan with non-stick coating if you want to ensure the food doesn't stick to the pan. However, it is quite possible to fry food in a pan that does not have non-stick coating without it sticking.

But to do so, it is important to bear the followings in mind :

  • Fry at the correct temperature

  • Be patience, and

  • Use a good quality frying pan

Demeyere Atlantis Cookware features the seven-ply InductoSeal® base that combines layers of stainless steel. First layer is made from stainless steel, the second layer is the bonding of pure aluminium, the third layer is aluminium alloy that is also followed by the bonding of pure aluminium, together the last three alloy form TriplInduc®.

 

What're the benefits of TriplInduc®?

 

  • TriplInduc® ensures that the product can be used on all of various kinds of heat sources (electro, ceran, gas, hi-light) including induction.

  • Thanks to TriplInduc® (Demeyere's 7-Ply Material, which thickness adjusted to the typical cooking process), you can, in addition, change heat source at any time. For example, thicker type of meat such as lamb are easy to fry in a stainless steel  frying pan. You can directly transfer the pan from the stovetop into the oven to continue cooking the dish without having the needs to transfer the utensils. The down side of Demeyere cookware are...

When it comes to normal cleaning, Demeyere cooking utensils can be placed in dishwasher. The only downside is, with increasingly more aggressive products been used in dishwasher nowadays, the cookware aluminium can be corroded.

Therefore if you wish to ensure that the utensil has been cleaned with greater care, it's advisable to use water and detergent, or washing liquid together with soft sponge, or small brush or cloth. If white stains remain after used caused by the limes or minerals for example, clean the utensils with lemon juice or vinegar and then rinse with warm water. The stains will then dissolved by themselves.

Some have concerns over the price tag, but honestly to me, well worth the investment.

Why? Well, the Demeyere Atlantis is head and shoulders above other cookware brands such as All Clad. Demeyere Atlantis outshines All Clad as Demeyere's handles are riveted, and the pots are either clad or disk bottomed. The Atlantis line (like the Sirocco line) has a substantial copper disk in the base of its non-sauteuse (that is, its vertical-sided) pots. Even if all else were equal, copper conducts heat better than aluminum, but the layer of aluminum in non-disk All Clad construction is thinner than the Atlantis's copper layer (thickness is directly correlated with conduction efficiency). As frosting on the cake, the Atlantis also sandwiches the copper in even better-conducting silver (albeit a very thin layer of silver). The Atlantis conical sauteuse is of an aluminum sandwich construction, but there, too, the aluminum thickness between the stainless layers is thicker than the aluminum layer in the All Clad lines.

How to fry in butter using Demeyere stainless steel pan

Frying in butter gives delicious flavor to your dishes, this is how you go about it.

  • Place the butter in the frying pan on high heat. Before the butter turns brown, reduce the heat by 30 to 50%, depending on the type of cooker and the power. Wait 10 seconds and then place the meat on the pan, turn the meat after few minutes.

How to fry without oil or butter using Demeyere stainless steel pan

Frying occurs at temperature between 180°C and 230°C, you can choose whether you want to fry with or without the use of fat. For healthy frying, you can fry using Demeyere stainless steel pan without using oil or butter. This is how you go about it.

  • Place the pan on the high heat.

  • From the beginning, do a water droplet test to see whether the pan has reached the correct temperature. Drip a couple droplets of water into the pan. If the water evaporates or you hear water is hissing, the temperature is not yet high enough. In that case, carry on dripping water into the pan until the droplets turn into a little bits of water that jumps around in the pan, only then has the right temperature been reached.

  • At that point, reduce the heat by 30 to 50%, depending on the type of cooker and the power. Wait 10 seconds and then place the meat on the pan, press it down well to ensure the piece of meat is fried evenly. You will note that the meat sticks to the pan base first, resists the temptation to pull the meat off. After a few minutes, it will detach itself from the base of the frying pan.

  • Turn the meat over and repeat the process on the other side. Press the piece of meat down again and fry until it detach itself from the base of the pan. Then turn heat off and put a lid on the pan. Remove the pan from the cooker and place on a non-conductive mat or rack.

  • The energy from the heat in the pan means the meat can carry on frying for another 10 minutes or so. The meat will not only carry on cooking, juices from the meat will collect in the pan and you can use them to make a delicious gravy or sauce.
