Ingredients :

900g / 2lb red cabbage, cored and
shredded

450g / 1lb onions, peeled and finely
sliced

450g / 1lb cooking apples, peeled,
cored and finely sliced

½ tsp mixed spice
-
1 tsp ground cinnamon
-
2 tbsp light soft brown sugar
-
salt and freshly ground black pepper
-
grated rind of 1 large orange
-
1 tbsp fresh orange juice
-
50ml / 2 fl oz medium sweet cider (or
apple juice)

2 tbsp wine vinegar
To serve :
-
dairy-free yogurt
-
freshly ground black pepper

Method :

Preheat the oven to 150°C/300°F/Gas
Mark 2. Put just enough cabbage in a large casserole to cover the base
evenly.

Place a layer of the onions and apples on
top of the cabbage.
-
Sprinkle a little of the mixed spice,
cinnamon and sugar over the top. Season with salt and pepper.

Spoon over a small portion of the orange
rind, orange juice and the cider.

Continue to layer the casserole with the
ingredients in the same order until used up.

Pour the vinegar as evenly as possible
over the top layer of the ingredients.

Cover the casserole with a close-fitting
lid and bake in the preheated oven, stirring occasionally, for 2 hours
until the cabbage is moist and tender. Serve immediately with the
dairy-free yogurt and black pepper.
