This
fusilli pasta dish is nutrient-packed and antioxidants-rich, comprises

tomatoes contain a good source of the antioxidant lycopene, which is

Ingredients :
Serves 4

6 large ripe tomatoes
-
2 tbsp lemon juice
-
2 tbsp lime juice
-
grated rind of 1 lime
-
2 shallots, peeled and finely chopped
-
2 garlic cloves, peeled and finely
chopped
-
1-2 red chilies
-
1-2 green chilies
-
450g / 1lb fresh fusilli pasta
-
4 tbsp half-fat crème fraîche
-
2 tbsp freshly chopped basil
-
sprig of oregano, to garnish

Method :
-
Place the tomatoes in a bowl and cover
with boiling water. Allow to stand until the skins start to peel away.

Remove the skins from the tomatoes,
divide each tomato in four and remove all the seeds. Chop the flesh
into small cubes and put in a small pan. Add the lemon and lime juice
and the grated lime rind and stir well.

Add the chopped shallots and garlic.
Remove the seeds carefully from the chilies, chop finely and add to the
pan.

Bring to the boil and simmer gently for
5-10 minutes until the salsa has thickened slightly.

Reserve the salsa to allow the flavors to
develop while the pasta is cooking.

Bring a large pan of water to the boil
and add the pasta. Simmer gently for 3-4 minutes or until the pasta is
just tender.

Drain the pasta and rinse in boiling
water. Mix with the salsa and divide onto serving plates. Top each with
a small spoonful of crème fraîche. Garnish with the chopped basil and
oregano and serve immediately.
