Orange Freeze Recipe

This orange freeze dessert is packed with antioxidants-rich ingredients, thus making it a health-boosting and potent cancer-fighting food.

Research has associated a citrus-rich diet with a reduced risk of certain cancers. This is attributed to a cancer-inhibiting compounds called limonene, found in citrus oils which is believed to reduce the growth of tumors. Oranges are loaded with high vitamin C content renowned for its health-immune-system-boosting qualities and free-radicals-disarming benefits. Thus making this cancer-fighting and anti-ageing citrus fruit as part of our healthy diet is a way to shun cancer.

Raspberries may help to prevent the growth of cancerous cells thanks to their ellagic acid content, which is one of the health-boosting antioxidant phytonutrients.

Redcurrants, besides being a rich source of immunity-boosting vitamin C, also contain a good amount of the antioxidant anthocyanidins which is believed to help with arthritis, cystitis, constipation and great for cleansing the blood.

Ingredients :

Serves 4

  • 4 large oranges

  • about 300ml / ½ pint low-fat vanilla ice cream

  • 225g / 8oz raspberries

  • 75g / 3oz icing sugar, sifted

  • redcurrant sprigs, to decorate

Healthy Easy Cancer-Fighting Recipe - Orange Freeze

Method :

  1. Set the freezer to rapid freeze. Using a sharp knife carefully cut the lid off each orange. Scoop out the flesh from the orange, discarding any pips and thick pith. Place the shells and lids in the freezer and chop any remaining orange flesh. Whisk together the orange juice, orange flesh and vanilla ice cream, until well blended.

  2. Cover and freeze for about 2 hours, occasionally breaking up the ice crystals with a fork or a whisk. Stir the mixture from around the edge of the container into the centre, then level and return to the freezer. Do this 2-3 times then leave until almost frozen solid.

  3. Place a large scoop of the ice cream mixture into the frozen shells. Add another scoop on top, so that there is plenty outside of the orange shell and return to the freezer for 1 hour. Arrange the lids on top and freeze for a further 2 hours, until the filled orange shell is completely frozen solid.

  4. Meanwhile, using a nylon sieve, press the raspberries into a bowl using the back of a wooden spoon and mix together with the icing sugar. Spoon the raspberry coulis onto four serving plates and place an orange at the centre of each. Dust with icing sugar and serve decorated with the redcurrants. Remember to return the freezer to its normal setting.
