An easy, healthy, low fat, low calorie dessert recipe for health-conscious who opt for low carb, low sugar and diet dessert. Just 1 tablespoon of dried fruit counts as one of the five portions of fruit and vegetables recommended per day.

Ingredients :

scant ½ cup bran flakes

cup golden raisins

scant ½ cup firmly packed raw brown sugar

1¼ cups low-fat milk

scant 1½ cups self-rising flour

tea or freshly squeezed fruit juice, to serve

Method :

Very lightly oil a 1lb/450g loaf pan
and line the bottom with waxed paper.

Put the bran flakes, golden raisins,
sugar, and milk into a mixing bowl, cover, and let soak for at least 1
hour in the refrigerator, or until the bran flakes have softened and
the fruit has plumped up after absorbing some of the milk — the mixture
can be left overnight in the refrigerator.

Preheat the oven to 375°F/190°C. Stir
the flour into the soaked ingredients, mix well, and spoon into the
loaf pan. Bake in the preheated oven for 40-45 minutes, or until the
point of a sharp knife inserted into the center of the loaf comes out
clean. Let cool in the pan on a wire rack.

When cold, turn the loaf out, and discard
the lining paper. Serve in slices with cups of tea or glasses of
freshly squeezed fruit juice. Store any leftover loaf in an airtight
container and consume within 2-3 days.
