This Australian summer fruit pavlova constituted of golden crisp meringues, and topped with fresh whipped cream cheese mixture and berries. Mixed berries pavlova makes a low-fat summer dessert that makes the most of your plump summer berries. It is sure to be a hit to finish off a posh summer dinner!
This healthy summer dessert recipe is tailored made for health-conscious. Berries (blueberries, raspberries, blackberries, strawberries) are packed with anthocyanidins, which have strong antioxidant properties to fight against infection and inflammation, slow and even reverse age-related mental decline. Blueberries also contain pterostilbene, which fights cancer, and the soluble fiber pectin, which is thought to help prevent cancer; both compounds help to reduce blood cholesterol

cups low-fat cream cheese

cup low-fat plain yogurt

½ -1 tsp vanilla extract, or to taste

10½oz/300g mixed berries

Method :

Preheat the oven to 250°F/120°C and
line a baking sheet with nonstick parchment paper. Whisk the egg whites
in a grease-free bowl until stiff then gradually add the sugar a
spoonful at a time, whisking well after each addition. Stir in the
cornstarch, vanilla extract and the vinegar.

When all the sugar has been added and the
mixture is stiff, spoon onto the lined baking sheet and form into a 6
inch/15cm circle, hollowing out the center to form a case.

Bake in the oven for 1½-2 hours, or until
crisp. Switch the oven off and let cool in the oven. Remove from the
oven and leave until cold before removing from the baking sheet. Store
in an airtight container until required.

Beat the cream cheese and yogurt together
in a bowl until well blended, then stir in the vanilla extract. Clean
the fruits if necessary, cutting any large fruits into bite-size
pieces. When ready to serve, pile the cheese filling in the center of
the pavlova case, top with the fruits, and serve cut into 6 slices.
