Lamb often served with mint jelly in
order to disguise the strong, gamy flavor of mutton. In this low-fat
lamb burger recipe, mint jelly is combined with low-fat cream cheese,
chopped fresh mint, finely diced cucumber to make a refreshingly
sweet dressing for the lamb burger. Seasoned well with salt, pepper,
onion, bread crumbs, and mint jelly, ground lamb patties make an
incredibly delicious base for the burger.

Ingredients :

1½ cups lean ground lamb

1 medium onion, finely chopped

4 tbsp dry whole wheat breadcrumbs

2 tbsp mint jelly salt and pepper
For the dressing
-
4 tbsp low-fat cream cheese
-
1 tbsp mint jelly, softened
-
2-inch / 5-cm piece cucumber, finely
diced

1 tbsp chopped fresh mint
To serve

4 whole wheat baps, split
-
2 large tomatoes, sliced
-
small piece of cucumber, sliced

lettuce leaves

Method :

Place the lamb in a large bowl and mix in
the onion, bread crumbs, and mint jelly. Season well with salt and
pepper, then mold the ingredients together with your hands to form a
firm mixture.

Divide the mixture into 4 portions and
form each portion into a circle measuring 4 inches / 10cm across. Place
the circles on a plate lined with parchment paper and let chill in the
refrigerator for 30 minutes.

Preheat the broiler to medium. Line a
broiler rack with foil, securing the ends under the rack, and place the
burgers on top. Cook for 8 minutes, then turn the burgers over with a
spatula and cook for an additional 7 minutes, or until the burgers are
cooked through.

Meanwhile, make the dressing. Mix the
cream cheese, mint jelly, cucumber, and chopped mint together in a
small bowl. Cover with plastic wrap and let chill in the refrigerator
for 1 hour, or until required.

Drain the burgers on paper towels and
serve inside baps with sliced tomatoes, cucumber, lettuce, and the
dressing.
