Anti Aging Salads Recipe
Sweet potatoes are not only very tasty but also full of energy. This
anti aging dish is best appreciated if served with other tropical
dishes.

Ingredients :
Serves 4

1kg / 2¼lb sweet potatoes
For the dressing :
-
45ml / 3 tbsp chopped fresh coriander
(cilantro)
-
juice of 1 lime
-
150ml / ¼ pint /
2/3
cup natural yogurt
For the salad :
-
1 red (bell) pepper, seeded and finely
diced
-
3 celery sticks, finely diced
-
¼ red onion, finely chopped
-
1 red chili, finely chopped
-
salt and freshly ground black pepper
-
coriander (cilantro) leaves, to garnish

Method :

Preheat the oven to 200°C/400°F/Gas
6. Wash and pierce the potatoes all over and bake them in the oven for
40 minutes or until tender.

Meanwhile, mix the three dressing
ingredients together in a bowl and season to taste. Chill while you
prepare the remaining ingredients.

In a large bowl mix the red pepper,
celery, onion and chili together.

Remove the potatoes from the oven and
when cool enough to handle, peel them. Cut the potatoes into cubes and
add them to the bowl. Drizzle the dressing over and toss carefully.
Season again to taste and serve, garnished with fresh coriander.
