Anti Aging Soup and Starter Recipe
This soup
is packed with age-defying nutrients found in lean chicken, chickpeas
and avocados. This anti aging soup is so substantial that it can be
enjoyed for lunch or dinner on its own.

Benefits of Lean Chicken & Chickpeas :
Lean chicken is a good source of the all-round anti-ageing nutrient
carnosine, which helps the body to fight toxins. Chickpeas replenish
the body's supplies of flavonoids, while avocados are a good source of
vitamin E and B vitamins.

Ingredients :
Serves 6

1.5 liters / 2½ pints / 6¼ cups chicken
stock

½ chipotle chili, seeded

2 skinless, boneless chicken breasts

1 medium avocado
-
4 spring onions (scallions), finely
sliced

400g / 14oz can chickpeas, drained

salt and freshly ground black pepper

Method :

Pour the chicken stock into a large pan
and add the chili. Bring to the boil, add the whole chicken breasts,
then lower the heat and allow to simmer for about 10 minutes or until
the chicken is cooked.

Remove the pan from the heat and lift out
the chicken breasts with a slotted spoon. Leave to cool a little.

Using two forks, shred the chicken into
small pieces. Set the shredded chicken into small pieces. Set the
shredded chicken aside.

Pour the chicken stock into a blender or
food processor and add the chili. Process the mixture until smooth,
then return to the pan.

Cut the avocado in half, remove the skin
and stone (pit), then slice the flesh into 2cm /
3/4
in pieces. Add it to the stock, with the spring onions and chickpeas.
Return the shredded chicken to the pan, with salt and black pepper to
taste, and heat gently. When the soup is heated through, spoon into
warmed bowls and serve.
