Anti Aging Main Meals Recipe
This anti
aging dish is mouth-watering as well as rejuvenating, and provides
useful nutrients to help repair age-related damage. Make it even more
nutritious by serving it with stir-fried vegetables such as mushrooms
and carrots, as well as with other dark-colored vegetables.

Ingredients :
Serves 4-6

2 sea bass, grey mullet or trout, each
weighing about 675-800g / 1˝-1žlb

25ml / 1˝ tbsp salted black beans

30ml / 2 tbsp finely shredded fresh root
ginger
-
4 garlic cloves, thinly sliced
-
30ml / 2 tbsp Chinese rice wine or dry
sherry
-
30ml / 2 tbsp light soy sauce
-
4-6 spring onions (scallions), finely
shredded or sliced diagonally

45ml / 3 tbsp sunflower oil
-
10ml / 2 tsp sesame oil

Method :

Wash the fish inside and out under cold
running water, then pat them dry on kitchen paper. Using a sharp knife,
slash three or four deep cross shapes on each side of each fish.

Mash half the black beans in a small bowl
and then stir in the remaining whole beans.

Place a little ginger and garlic inside
the cavity of each fish and then lay them on a plate or dish.

Rub the bean mixture into the fish,
especially into the slashes then scatter the remaining ginger and
garlic over the top. Cover and chill for 30 minutes.

Place the plate inside a steamer over a
pan of boiling water. Sprinkle the rice wine or sherry and half the soy
sauce over and steam for 15-20 minutes, or until just cooked.

Sprinkle the cooked fish with the
remaining soy sauce and then scatter the shredded or sliced spring
onions over the top.

In a small pan, heat the sunflower oil
until it is smoking, then drizzle it over the spring onions on top of
the fish. Finally, sprinkle with the sesame oil and then serve the fish
immediately.
