Anti Aging Desserts and Bakes Recipe
This unusual combination of ingredients provides a substantial amount
of soya, which not only helps to alleviate the symptoms of the
menopause, but is also beneficial for younger people, both male and
female, as it helps to maintain optimal hormone balance.

Ingredients :
Serves 6

250g / 9oz / 1½ cups stoned (pitted)

600ml / 1 pint / 2½ cups apple juice

5ml / 1 tsp ground cinnamon

285g / 10½oz pack chilled bean curd
(tofu), drained and cubed

150ml / ¼ pint /
2/3
cup unsweetened soy milk

Method :

Put the dates in a pan. Pour in 300ml / ½
pint / 1¼ cups of the apple juice and leave to soak for 2 hours.

Bring the apple juice to the boil, reduce
the heat and simmer for 10 minutes, then leave to cool. Using a slotted
spoon, lift out one-quarter of the dates, chop roughly and set aside.

Purée the remaining dates in a food
processor or blender. Add the cinnamon and process with enough of the
apple juice to make a smooth paste.

Add the cubes of bean curd (tofu), a few
at a time, processing after each addition. Add the remaining apple
juice and the soy milk.

By hand: Pour the mixture into a
plastic tub or similar freezer-proof container and freeze for 4 hours,
beating once with a fork, electric mixer or in a food processor to
break up the ice crystals. After this time, beat again with a fork to
ensure a smooth texture.

Using an ice cream maker: Churn the mixture until very thick,
but not thick enough to scoop. Scrape into a plastic tub.

Add most of the remaining dates to Li the
mixture and stir to combine. Freeze for 2-3 hours until firm.

Scoop the ice cream into dessert glasses,
decorate with the remaining chopped dates and serve immediately.
