Ingredients :

Serves 6

  • 250g / 9oz / 1½ cups stoned (pitted) dates

  • 600ml / 1 pint / 2½ cups apple juice

  • 5ml / 1 tsp ground cinnamon

  • 285g / 10½oz pack chilled bean curd (tofu), drained and cubed

  • 150ml / ¼ pint / 2/3 cup unsweetened soy milk

Natural Anti Aging Diet - Date and Tofu Ice

Method :

  1. Put the dates in a pan. Pour in 300ml / ½ pint / 1¼ cups of the apple juice and leave to soak for 2 hours.

  2. Bring the apple juice to the boil, reduce the heat and simmer for 10 minutes, then leave to cool. Using a slotted spoon, lift out one-quarter of the dates, chop roughly and set aside.

  3. Purée the remaining dates in a food processor or blender. Add the cinnamon and process with enough of the apple juice to make a smooth paste.

  4. Add the cubes of bean curd (tofu), a few at a time, processing after each addition. Add the remaining apple juice and the soy milk.

  5. By hand: Pour the mixture into a plastic tub or similar freezer-proof container and freeze for 4 hours, beating once with a fork, electric mixer or in a food processor to break up the ice crystals. After this time, beat again with a fork to ensure a smooth texture.

  6. Using an ice cream maker: Churn the mixture until very thick, but not thick enough to scoop. Scrape into a plastic tub.

  7. Add most of the remaining dates to Li the mixture and stir to combine. Freeze for 2-3 hours until firm.

  8. Scoop the ice cream into dessert glasses, decorate with the remaining chopped dates and serve immediately.
