Anti Aging Salads Recipe
Great for
the eyes, this dried fruit salad contains plentiful supplies of
antioxidants, which are thought to reduce the risk of cataracts and
macular degeneration later in life, and the eye-protecting nutrients
lutein and zeaxanthin.

Ingredients :

115g / 4oz / ½ cup ready-to-eat dried
apricots

115g / 4oz / ½ cup ready-to-eat dried
peaches

1 pear
-
1 apple
-
1 orange

cup mixed raspberries and blackberries

1 cinnamon stick

30ml / 2 tbsp clear honey

30ml / 2 tbsp lemon juice

Method :

Soak the dried apricots and peaches in
water for 1-2 hours until plump and juicy, then drain and halve or
quarter, using a sharp knife.

Peel and core the pear and apple and cut
into cubes. Peel the orange with a sharp knife, removing all the white
pith, and cut into wedges. Place all the fruit in a large pan with the
raspberries and blackberries.

Add 550ml / 18 fl oz / 2½ cups water the
cinnamon and clear honey.

Bring to the boil, then cover the pan and
allow to simmer very gently for 10-12 minutes, until the fruit is just
tender, stirring occasionally.

Remove the pan from the heat an stir in
the lemon juice. Allow to cool, then pour into a serving bowl an chill
for 1-2 hours before serving.
