Anti Aging Salads Recipe
This is a
very colorful dish, an important fact considering that the eyes are the
gateway to a good digestion. Bright and colorful dishes stimulate the
brain to optimize the regulation of digestive juices, and also provide
essential antioxidants.
Cooking Tips :
For an interesting alternative, try using long sweet peppers in this
recipe as they produce a slightly different flavor.

Ingredients :
Serves 4

8 green, yellow and/or orange (bell)
peppers

1 garlic clove, crushed

75ml / 5 tbsp olive oil

60ml / 4 tbsp wine vinegar

4 tomatoes, sliced
-
1 red onion, thinly sliced

freshly ground black pepper

sprigs of fresh coriander (cilantro), to
garnish

Method :

Cut the peppers into quarters, discarding
the cores, seeds and tops. Place under a preheated grill (broiler),
skin side uppermost, and cook until the skin chars and blisters.

Place the peppers in a polythene bag and
set aside for about 15 minutes to let their skins loosen.

Remove the peppers from the bag and
scrape off the skins using a sharp knife.

Blend together the garlic, olive oil and
vinegar. Arrange the peppers, tomatoes and onion on four serving plates
and pour over the garlic dressing. Season, garnish with sprigs of
coriander and serve.
