Method :

Cut off the watermelon skin, discard the
shiny black seeds and cut the flesh into chunks.

Place the watermelon chunks in a large
bowl, pour in the chilled water and allow the mixture to stand for 10
minutes.

Transfer the soaked watermelon chunks to
a large strainer set over a mixing bowl. Using a wooden spoon, press
gently on the fruit to extract all the liquid.

Add the lime juice and any soaking water
to the melon mixture and stir, then sweeten to taste with honey.

Pour the juice into a jug (pitcher), add
ice cubes and stir. Serve immediately in glasses.
