Anti Aging Salads Recipe

This anti aging salad is packed with valuable antioxidants that can
help to neutralize the harmful free radicals in the body. Oranges and
lemon juice are packed with vitamin C, carrots provide an excellent
source of beta-carotene, and the almonds contain a useful supply of
vitamin E. Fresh dates are high in fiber and provide the body with
plenty of energy.

Ingredients :
Serves 4

1 Little Gem (Bibb) lettuce

2 carrots, finely grated

2 oranges
-
115g / 4oz fresh dates, stoned (pitted)
and cut into eighths, lengthways

25g / 1oz / ¼ cup toasted whole almonds,
chopped

30ml / 2 tbsp lemon juice
-
5ml / 1 tsp caster (superfine) sugar

1.5ml / ¼ tsp salt
-
15ml / 1 tbsp orange flower water

Method :

Carefully separate the individual lettuce
leaves and arrange them in the bottom of a salad bowl or on individual
serving plates.

Place the finely grated carrot in a mound
on top of the arranged lettuce leaves.

Peel and segment the oranges and arrange
them around the carrot. Pile the prepared dates on top, then sprinkle
the salad with the toasted almond pieces.

To make the dressing, mix together the
lemon juice, caster sugar, salt and orange flower water in a small
bowl. When the mixture is thoroughly combined, sprinkle lightly over
the salad and serve immediately.
