Anti Aging Salads Recipe
Fresh mint
always adds a welcome flavor to any salad dish. The cumin seeds and
black pepper excite the taste buds which, in turn, stimulate the brain
to secrete health-promoting chemicals.

Ingredients :
Serves 7

6 oranges

2 red onions
-
15ml / 1 tbsp cumin seeds

5ml / 1 tsp coarsely ground black pepper

15ml / 1 tbsp chopped fresh mint

90ml / 6 tbsp olive oil

salt
To serve :

fresh mint sprigs
-
black olives

Method :

Slice the oranges thinly, working over a
bowl to catch any juice. Then, holding each orange slice in turn over
the bowl, cut round with scissors to remove the peel and all of the
white pith.

Using a sharp knife, slice the red onions
thinly and then separate into rings.

Arrange the orange and onion slices in
layers in a shallow dish, sprinkling each layer with cumin seeds,
pepper, mint, olive oil and salt. Pour over the reserved orange juice.

Leave the salad to marinate in a cool
place for about 2 hours. Just before serving, scatter the salad with
the mint sprigs and black olives.
