Peach and Cardamom Yogurt Ice Recipe

Fresh peaches are full of essential vitamins and minerals, such as antioxidant vitamin C and beta-carotene, which help to neutralize free radicals that can damage the body. Live natural yogurt is full of healthy bacteria that can aid effective digestion.

Ingredients :

Serves 6

  • 8 cardamom pods

  • 6 peaches, total weight about 500g / 1¼lb, peeled, halved and stoned (pitted)

  • 30ml / 2 tbsp water

  • 200ml / 7 fl oz / scant 1 cup live natural (plain) yogurt

Natural Anti Aging Diet - Peach and Cardamom Yogurt Ice

Method :

  1. Put the cardamom pods on a board and crush them with the bottom of a ramekin, or place them in a mortar and crush them with a pestle.

  2. Chop the peaches roughly and put them in a pan. Add the crushed cardamom pods, together with their black seeds and the water. Cover the pan and allow to simmer for about 10 minutes or until the fruit is tender. Leave to cool.

  3. Tip the peach mixture into a food processor or blender, process until the mixture is smooth, then use a wooden spoon to press through a strainer placed over a large bowl.

  4. By hand: Add the yogurt to the peach and cardamom purée and mix together in the bowl. Pour into plastic tub and freeze for about 5 hours until firm, beating once or twice with a fork or an electric whisk to break the ice crystals.
    Using an ice cream maker: Churn the peach and cardamom purée until thick, then scrape it into a plastic tub or similar container. Stir in the natural yogurt and freeze until firm enough to hold a scoop shape.

  5. Use an ice cream scoop to make balls of ice cream. Arrange on a large platter, and serve immediately.
