Anti Aging Soups & Starters Recipe
Start any
main meal with this colorful salad. Red or other dark-colored
vegetables are a standard recommendation by all nutritionists who
specialize in longevity diet, so this dish is perfect for anyone
following an anti aging diet.
Cooking Tips :
To make the raspberry purée, whizz the fruit in a food processor or
blender, then press it through a sieve (strainer) placed over a bowl to
remove the seeds.

Ingredients :
Serves 4

8 red mullet fillets, scaled

15ml / 1 tbsp olive oil

15ml / 1 tbsp raspberry vinegar

175g / 6oz mixed dark green and red salad
leaves, such as lamb's lettuce, radicchio, oakleaf lettuce and rocket (arugula)
salt and freshly ground black pepper
For the raspberry dressing :

115g / 4oz / ¾ cup raspberries, puréed
and sieved

30ml / 2 tbsp raspberry vinegar

60ml / 4 tbsp extra virgin olive oil

Method :

Lay the red mullet fillets in a shallow
dish. Whisk together the olive oil and raspberry vinegar, add a pinch
of salt and drizzle the mixture over the fish. Cover and leave to
marinate for 1 hour.

Meanwhile, whisk together the dressing
ingredients in a small bowl and season to taste with salt and freshly
ground black pepper.

Wash the mixed salad leaves well and pat
dry with a clean dish towel, then put them in a large bowl. Pour most
of the raspberry dressing over the leaves and toss lightly to combine.

Heat a ridged grilling pan or frying pan
until very hot, put in the red mullet fillets and fry for 2-3 minutes
on each side, until just cooked. Cut the fillets diagonally in half to
make rough diamond shapes.

Arrange a tall heap of salad in the
middle of each serving plate. Prop up four red mullet fillet halves on
the salad on each plate with the reserved dressing spooned around, and
serve.
