Peppers
are used by many longevity devotees. The different colorful peppers are
a feast to the eye and to the taste buds, while the artichoke hearts
help to improve the health of the digestive system.

which can help to slow aging by neutralizing harmful free radicals in

Ingredients :
Serves 6

3 red (bell) peppers

2 yellow or orange (bell) peppers

2 green (bell) peppers

50g / 2oz / ½ cup sun-dried tomatoes in
oil, drained

1 garlic clove
-
30ml / 2 tbsp balsamic vinegar
-
75ml / 5 tbsp olive oil
-
few drops of chili sauce
-
4 canned artichoke hearts, drained and
sliced
-
salt and freshly ground black pepper
-
snipped basil leaves, to garnish

Method :

Preheat the oven to 200°C/400°F/Gas
6. Lightly oil a foil-lined baking sheet and place the whole peppers on
the foil. Bake for about 45 minutes until beginning to char. Cover with
a dish towel and leave to cool for 5 minutes.

Slice the sun-dried tomatoes into thin
strips. Peel the garlic clove, then thinly slice. Set the prepared
tomatoes and garlic aside while you make the dressing.

In a small bowl, beat together the
vinegar, oil and chili sauce, then season with a little salt and ground
black pepper.

Peel and slice the peppers. Mix with the
artichokes, tomatoes and garlic. Pour over the dressing and scatter
with the snipped basil.
