Anti Aging Soup Recipe
This is
another anti aging nutrition from Russia, with extra fish to top up
those much-needed omega-3 fatty acids. These help to reduce the risk of
heart disease and stroke, while keeping the joints in good condition.

Leafy green vegetables, such as sorrel and spinach, are rich in
beta-carotene, which help to fight free-radicals in the body.

Ingredients :
Serves 4

25g / 1oz / 2 tbsp butter

225g / 8oz sorrel, washed and stalks
removed

225g / 8oz young spinach, washed and
stalks removed

25g / 1oz fresh horseradish, grated
-
750ml / 1¼ pints / 3 cups apple juice
-
1 pickled cucumber, finely chopped
-
45ml / 3 tbsp lemon juice
-
30ml / 2 tbsp chopped fresh dill
-
225g / 8oz cooked fish, such as pike,
perch or salmon, skinned and boned
-
salt and freshly ground black pepper
-
sprig of dill, to garnish

Method :

Melt the butter in a large pan. Add the
prepared sorrel and spinach leaves and the grated fresh horseradish.
Cover the pan and gently cook for 3-4 minutes, or until the sorrel and
spinach leaves are wilted.

Spoon the cooked spinach and sorrel
leaves into a food processor or blender and process to a fine purée.
Ladle the purée into a tureen or serving bowl and stir in the apple
juice, chopped cucumber, lemon juice and chopped dill.

Chop the cooked fish into bite-size
pieces. Add to the soup, then season with salt and plenty of ground
black pepper. Chill for at least 3 hours before serving, garnished with
a sprig of fresh dill.
