Anti Aging Desserts and Bakes Recipe
This apple cake contains very little saturated fat, making it a good
cake for an anti aging diet.
Cooking Tips : Leave the apple peel on as the skin adds extra fiber and softens on
cooking.

Ingredients :
Serves 8

225g / 8oz / 2 cups self-raising
(self-rising) whole meal (whole-wheat) flour

5ml / 1 tsp baking powder

10ml / 2 tsp ground cinnamon

175g / 6oz / 1 cup chopped dates
-
75g / 3oz / ½ cup light muscovado
(molasses) sugar

15ml / 1 tbsp pear and apple spread

120ml / 4 fl oz / ½ cup apple juice

2 eggs
-
90ml / 6 tbsp sunflower oil

2 eating apples, cored and grated
-
15ml / 1 tbsp chopped walnuts

Method :

Preheat the oven to 180°C/350°F/Gas
4. Grease and line a deep, round 20cm / 8in cake tin (pan).

Sift the whole meal flour, baking powder
and cinnamon into a mixing bowl, then add the dates and mix into the
dry ingredients. Make a well in the centre.

Mix the sugar with the pear and apple
spread in a small bowl. Gradually stir in the apple juice. Add to the
dry ingredients with the eggs, oil and apples. Mix thoroughly.

Spoon the mixture into the cake tin
(pan), sprinkle with walnuts and bake for 60 minutes or until a skewer
comes out clean. Transfer to a rack, remove the paper and leave to
cool.
