Fruity Cottage Cheese Salad Recipe

In this fruity cottage cheese salad recipe, delicate and mild flavor of cottage cheese is heightened with the chopped herbs. Naturally low in fat, calories and carbohydrates as well as high in protein and bone-building calcium, weight watchers and some health food devotees tend to integrate cottage cheese into their diets.

Healthy, nutritious and easily digested, this herb-flavored cottage cheese make a perfect accompaniment to fresh parsley, snipped chives, bell peppers, ogen, salad greens, seedless grapes and red onion. To serve, this bed of fruity cottage cheese salad is topped with savory salad dressing.

Ingredients :

Serves 4

  • 1/3  cup cottage cheese

  • 1 tsp chopped fresh parsley

  • 1 tbsp snipped fresh chives

  • 1 tsp chopped fresh chervil or basil

  • 2 assorted colored bell peppers, seeded and peeled

  • 1 small melon, such as ogen (about 10½oz / 300g after peeling and seeding)

  • 6oz / 175g assorted salad greens

  • 2oz / 55g seedless grapes

  • 1 red onion, thinly sliced

     

    For the dressing :

  • 3 tbsp freshly squeezed lime juice

  • 1 small fresh red chili, seeded and finely chopped

  • 1 tsp honey

  • 1 tbsp soy sauce

Healthy Easy Salad Recipe - Fruity Cottage Cheese Salad

Method :

  1. Place the cottage cheese in a bowl and stir in the chopped herbs. Cover lightly and set aside.

  2. Cut the peeled bell peppers into thin strips and set aside. Cut the melon in half, discard the seeds and cut into small wedges. Remove and discard the rind, or run a sharp knife between the skin and flesh to loosen, then cut the flesh horizontally across. Push the flesh in alternate directions but so that it still sits on the skin. Set aside.

  3. Arrange the salad greens on a large serving platter with the melon wedges.

  4. Spoon the herb-flavored cottage cheese on the platter and arrange the reserved bell peppers, the grapes, and red onion slices around the cheese.

  5. To make the dressing, mix the lime juice, chili, honey, and soy sauce together in a small bowl or pitcher then drizzle over the salad and serve as 4 portions.
