Broccoli
are epitome of health that contain sulphoraphane and indoles. These
stimulate the production of enzymes that help to neutralize
cancer-causing substances in the body. Besides cancer-fighting,
broccoli also protects against heart disease and respiratory
infections. Pairing broccoli with eggs is ideal cancer-fighting and
heart-healthy food. Eating eggs may offer some protection against heart
disease, breast cancer and eye problems.

300g (10oz) broccoli
-
2 small leeks, about 300g (10oz) in
total, trimmed, slit and well rinsed

4 tablespoons lemon juice
-
2 tablespoons olive oil
-
2 teaspoons clear honey
-
1 tablespoon capers, well drained

2 tablespoons chopped tarragon
-
4 hard-boiled eggs
-
salt and pepper

Method :

Cut the broccoli into florets and thickly
slice the stems and the leeks. Put the broccoli in the to of a steamer,
cook for 3 minutes, add the leeks and cook for another 2 minutes.

Mix together the lemon juice, oil, honey,
capers and tarragon in a salad bowl and season to taste.

Shell and roughly chop the eggs.

Add the broccoli and leeks to the
dressing, toss together and sprinkle with the chopped eggs. Garnish
with tarragon sprigs, if liked, and serve warm with extra thick sliced
whole meal bread.
Variations :
For broccoli, cauliflower & egg
salad, use 150g (5oz) broccoli and 150g (5oz) cauliflower instead
of 300g (10oz) broccoli. Cut the cauliflower into small florets and
steam with the broccoli. Serve with a blue cheese dressing made by
mixing together 75g (3oz) blue cheese, 6 chopped sun-dried tomatoes
at a tablespoons balsamic vinegar. |
