Easy, healthy yet tasty salads can get so
stereotype if you don't get creative with ingredients. Go for a
variety of ingredients and you'll be surprise of the
irresistible and extraordinary tastes it offers. This is a warm salad
concocted from crabmeat, shrimp, chili, snow peas, scallions, corn
kernels, carrot, bean sprouts, and spinach leaves which will just
knock your socks off!

Ingredients :
Serves 4

2 sprays sunflower oil

1 fresh Serrano chili, seeded and finely
chopped
-
4oz / 115g snow peas, cut diagonally in
half

6 scallions, trimmed and finely shredded
-
2 heaping tbsp frozen corn kernels,
defrosted

5½oz / 150g white crabmeat, drained
if canned
-
2oz / 55g raw shrimp, peeled and
de-veined, thawed if frozen
-
1 carrot, about 3oz / 85g, peeled and
grated
-
¾ cup bean sprouts
-
8oz / 225g fresh baby spinach leaves

1 tbsp finely grated orange rind

2 tbsp orange juice
-
1 tbsp chopped fresh cilantro, for
sprinkling

Method :

Heat a wok and, when hot, spray in the
oil and heat for 30 seconds. Add the chili and snow peas then stir-fry
over medium heat for 2 minutes.

Add the scallions and corn and continue
to stir-fry for an additional 1 minute.

Add the crabmeat, shrimp, carrot, bean
sprouts, and spinach leaves. Stir in the orange rind and juice and
stir-fry for 2-3 minutes, or until the spinach has begun to wilt and
everything is cooked. Serve divided equally among 4 bowls, sprinkled
with the chopped cilantro.
