Pack more flavor into fewer calories
with this blackened salmon with salsa recipe. Salmon are dressed up
with Cajun seasoning and oregano mixture and pan-fried to a brown
exterior. Serve with Cajun salsa and garnish with lime wedges.

Ingredients :

3 tablespoons Cajun seasoning

1 teaspoon dried oregano

4 salmon fillets, about 75g (3oz) each

sunflower oil, to brush
-
lime wedges, to garnish
Cajun salsa :
-
410g (13˝oz) can black-eyed beans,
rinsed and drained

2 tablespoons olive oil
-
1 avocado, peeled, stoned and chopped
-
2 plum tomatoes, finely chopped
-
1 yellow pepper, deseeded and finely
chopped

2 tablespoons lime juice
-
salt and pepper

Method :

Mix together the Cajun seasoning and
oregano in a shallow bowl.

Brush the salmon on both sides with a
little oil and coat with the spice mix, making sure the fish is
completely covered. Set aside.

Meanwhile, make the salsa by mixing
together all the ingredients in a bowl. Season to taste and set aside.

Cook the salmon in a preheated, dry
frying pan for 4 minutes on each side.

Slice the salmon and serve with the
salsa, with lime wedges to garnish.
Variations :
For salsa verde, drain and finely
chop 6 anchovy fillets in oil and combine them with 3 tablespoons
chopped basil, 3 tablespoons chopped parsley or chives, 2 teaspoons
roughly chopped capers, 2 teaspoons Dijon mustard, 3 tablespoons
olive oil and 1˝
tablespoons white wine vinegar. |
