Who says healthful meal has to be
bland? The rich flavor of salmon show cased in this healthy and
easy-to-prepare curry-topped
salmon fillets dish. Salmon fillets are topped with mixture of wheat
breadcrumbs, curry paste and chopped cilantro and then baked to a
crisp-tender texture. With this heart-healthy recipe, you can just
indulge yourself with a seafood diet with superb nutrition!

Ingredients :
Serves 4

4 salmon fillets, about 6oz / 175g each

scant 1 cup fresh whole wheat breadcrumbs
-
1½ tbsp curry paste
-
1 tbsp chopped fresh cilantro

lemon wedges to garnish salad greens, to
serve

Method :

Preheat the oven to 350°F/180°C.
Discard any fine bones from the salmon fillets and rinse lightly. Pat
dry with paper towels.

Mix the breadcrumbs, curry paste, and
chopped cilantro together in a bowl until well blended.

Place each salmon fillet on a sheet of
foil and pat the curry-flavored breadcrumbs on top of each. Cover with
another sheet of foil and place on one or two large baking sheets.

Bake for 10 minutes then remove the top
sheet of foil and cook for an additional 10 minutes, or until the
salmon is tender. Serve garnished with lemon wedges and serve with
salad greens.
