This quick, easy and healthy baked
plaice is whipped up in a matter of minutes. Plaice fillets are
dressed up with coconut, breadcrumbs, chives and paprika mixture,
then baked to a slightly brown exterior with herby coconut-topping.
You'll have your delicious seafood dinner with lots of health
benefits.

Ingredients :

30g (1½oz) desiccated coconut

50g (2oz) breadcrumbs

2 tablespoons chopped chives

pinch of paprika

4 skinless plaice fillets
-
salt and pepper
lime wedges, to serve

Method :

Mix together the coconut, breadcrumbs,
chives and paprika and season to taste.

Arrange the fish fillets on a baking
sheet, top each one with some of the coconut mixture and cook in a
preheated oven, 180°C (350F), Gas Mark 4, for 15 minutes.

Serve the fish with lime wedges and
accompanied with baked potatoes and a rocket salad, if liked.
Variations :
For lemon sole with an almond crust,
substitute the plaice fillets for 4 skinless lemon sole fillets. In the
topping, use 50g (2oz) flaked almonds instead of coconut. Serve the
fish with new potatoes, watercress and lemon wedges.
