Mexican cuisine - tuna enchiladas. Tuna makes these homemade
enchiladas healthier than any meat. This easy and healthy rolled
chapattis brimming with tuna and a homemade cheesy tomato salsa are
surprisingly quick to assemble. You can bring a little taste of
Mexico to your dining table within 30 minutes for a weeknight dinner!

Ingredients :
Serves 4
Preparation time : 10 minutes
Cooking time : 15 minutes

2 ripe tomatoes

1 red onion, peeled and finely chopped

1 tablespoon lime juice or to taste

8 chapattis

300g (10oz) can tuna in spring water,
drained

150g (5oz) reduced-fat Cheddar cheese,
grated

salt and pepper
-
fresh coriander, chopped, to garnish

Method :

Chop the tomatoes and mix them with the
onion. Season well and add lime juice to taste.

Spoon some of the tomato mixture over
each chapatti, top with the tuna and half the cheese. Roll up each
chapatti and arrange them in a heatproof dish. Sprinkle over the
remaining cheese and any remaining tomato salsa.

Cover and cook in a preheated oven, 200°C
(400°F), Gas Mark 6, for 15 minutes until golden. Garnish with
coriander and serve immediately.
Variations :
For veggie enchiladas, slice and
grill 12 mushrooms and 2 courgettes and use them instead of the tuna.
For extra spice, add a chopped and deseeded jelapeņo pepper to the
tomatoes and onions. |
