Lime & Chili Marinated Chicken Recipe

This special occasion or entertaining grilled chicken dish are bursting with flavors which obtained from lime juice, chilies, garlic, salt and pepper marinade. Serve with cooked rice noodles and chopped fresh coriander, this healthy chicken recipe makes a simple yet great dinner party food ideas.

Ingredients :

Serves 4
Preparation time : 15-20 minutes, plus marinating
Cooking time : 10 minutes

  • 4 boneless, skinless chicken breasts, about 125g (4oz) each

  • 4 limes

  • 2 garlic cloves, chopped

  • 2 tablespoons chopped dried or fresh red chili

  • 50ml (2 fl oz) sunflower oil

  • 200g (7oz) rice noodles

  • 2 tablespoons chopped fresh coriander, to garnish

  • salt and pepper

Method :

  1. Presoak about 12 wooden skewers in warm water. Cut the chicken into strips.

  2. Grate the rind and squeeze the juice from 2 limes and mix with the garlic, chili and oil. Toss the chicken in the lime and chili mix, season with salt and pepper and set aside for 1 hour.

  3. Thread pieces of chicken on to skewers, not overloading each one. Halve the remaining limes. Cook the chicken and lime halves under a preheated hot grill or on a preheated griddle for about 10 minutes.

  4. Meanwhile, cook the noodles according to the instructions on the packet.

  5. Serve the chicken with the noodles, garnished with coriander, and the caramelized lime halves.

Variations :

For chicken tikka, finely chop 1 onion, 1 large deseeded chili, a 2cm (¾ inch) piece fresh root ginger and 2 finely chopped garlic cloves. Combine with 150g (5oz) low-fat natural yogurt, 3 teaspoons mild curry paste and 4 tablespoons chopped fresh coriander. Marinate the chicken, then grill and serve as above.
