This
caramelized apple and mustard velouté sauce goes well with baked ham,
roast game, baked brie or camembert.

2 large apples (400g), unpeeled

20g butter

1 tablespoon brown sugar

1˝ cups (375ml) chicken velouté

1 tablespoon dijon mustard

Method :

Remove core from apples, then cut into 16
wedges.

Melt butter in medium frying pan, cook apple,
uncovered, until browned lightly both sides.

Add sugar and velouté to pan. Stir in mustard.
Cook, stirring, until sauce is heated through.
