Carrot & Ginger Soup Recipe

This easy and healthy soup is a potpourri of carrot, oniony, garlicky and gingery goodness. The soup mixture is blended until smooth and then served with bread cubes and garnished with chives and lemon zest.

Known for its numerous therapeutic and medicinal properties, fresh ginger is widely used in Asian and oriental cookery. Ginger is regarded as an excellent herbal medicine that alleviates symptoms of gastrointestinal distress. It promotes the elimination of intestinal gas, relaxes and soothes the intestinal tract. Ginger not only warms up your body on a cold day, but also helps to promote healthy perspiration, which is helpful to treat colds, flu and fevers. Regularly spicing up your meals with fresh ginger may help arthritis-related problems with your aging knees as ginger contains very potent anti-inflammatory compounds.

The soup is best served during cold and rainy days, and it is especially comforting when consumed as winter dinner. It will definitely tantalize everyone's taste buds with its aromatic and pungent flavors.

Ingredients :

  • 4 slices of bread, crusts removed

  • 1 tsp yeast extract

  • 2 tsp olive oil

  • 1 onion, peeled and chopped

  • 1 garlic clove, peeled and crushed

  • ½ tsp ground ginger

  • 450g / 1lb carrots, peeled and chopped

  • 1 liter / 1¾ pint vegetable stock

  • 2.5cm / 1 inch piece of root ginger, peeled and finely grated

  • salt and freshly ground black pepper

  • 1 tbsp lemon juice

To garnish :

  • chives

  • lemon zest

Healthy Easy Soups Recipe - Carrot & Ginger Soup

Method :

  1. Preheat the oven to 180°C/350°F/Gas Mark 4. Roughly chop the bread. Dissolve the yeast extract in 2 tablespoons of warm water and mix with the bread.

  2. Spread the bread cubes over a lightly oiled baking tray and bake for 20 minutes, turning half way through. Remove from the oven and reserve.

  3. Heat the oil in a large saucepan. Gently cook the onion and garlic for 3-4 minutes.

  4. Stir in the ground ginger and cook for 1 minute to release the flavor.

  5. Add the chopped carrots, then stir in the stock and the fresh ginger. Simmer gently for 15 minutes.

  6. Remove from the heat and allow to cool a little. Blend until smooth, then season to taste with salt and pepper. Stir in the lemon juice. Garnish with the chives and lemon zest and serve immediately.
