Citrus Dressing & Marinade Dressing & Marinade Recipe

This citrus dressing is best served over delicate greens, such as leaf lettuce or baby spinach. This mixture is also an ideal marinade for fish, seafood, poultry and meat.

Fish and seafood should not marinate any longer than 30 minutes. Poultry and meat can marinate up to 24 hours. Discard the used marinade after the food has finished marinating.

Ingredients :

  • 1 tablespoon Dijon mustard

  • 2 tablespoons balsamic or sherry vinegar

  • 1/8 teaspoon salt and 1/8 teaspoon pepper

  • 1/3 cup extra virgin olive oil

  • 3 tablespoons orange juice

  • 1 teaspoon liquid honey

Method :

  1. In a small bowl, add the Dijon mustard, vinegar, salt and pepper. Whisk well.

  2. Slowly add the oil, whisking continuously until well blended.

  3. Whisk in the orange juice and honey until blended.

  • This recipe makes approximately 2/3 cup.
