Indian Dressing & Marinade Recipe

This virtually fat-free dressing is terrific tossed with steamed vegetables or as a marinade for chicken, fish or seafood.

Because of the high acidic content of this mixture, you should marinate foods in a glass, stainless steel or ceramic bowl. Marinate chicken for at least 2 hours and fish and seafood for only 30 minutes. Discard the used marinade after the food has finished marinating.

Ingredients :

  • 1 tablespoon ground coriander seed

  • 1 teaspoons ground cumin

  • 3 garlic cloves, minced

  • 1 tablespoon freshly grated ginger root

  • 1 jalapeno pepper, seeded and minced

  • 1 teaspoon salt

  • teaspoon turmeric

  • teaspoon ground cayenne pepper

  • 1 cup plain non-fat yogurt

  • 2 tablespoons fresh lemon juice

Method :

  1. Heat a small skillet over medium heat for 1 to 2 minutes. Add the coriander and cumin to the skillet and cook, stirring continuously for 30 seconds.

  2. Place the coriander and cumin in a medium bowl and add the rest of the ingredients. Whisk together until well blended.

  • This recipe makes approximately 1 cups.
