This virtually fat-free dressing is
terrific tossed with steamed vegetables or as a marinade for chicken,
fish or seafood.
Because of the high acidic content of
this mixture, you should marinate foods in a glass, stainless steel
or ceramic bowl. Marinate chicken for at least 2 hours and fish and
seafood for only 30 minutes. Discard the used marinade after the food
has finished marinating.
1 tablespoon ground coriander seed
1½ teaspoons ground cumin
3 garlic cloves, minced
1 tablespoon freshly grated ginger root
1 jalapeno pepper, seeded and minced
1 teaspoon salt
½ teaspoon turmeric
¼ teaspoon ground cayenne pepper
1 cup plain non-fat yogurt
2 tablespoons fresh lemon juice
Heat a small skillet over medium heat for
1 to 2 minutes. Add the coriander and cumin to the skillet and cook,
stirring continuously for 30 seconds.
Place the coriander and cumin in a medium
bowl and add the rest of the ingredients. Whisk together until well
