Soubise Sauce Recipe

 

This homemade soubise sauce goes well with poached eggs or white fish fillets.

Ingredients :

preparation time 5 minutes
cooking time 20 minutes
makes 2 cups

  • 40g butter

  • 1 large white onion (200g), sliced thinly

  • 1 cup (250ml) béchamel sauce

  • ¾ cup (180ml) cream

  • pinch nutmeg

Method :

  1. Melt butter in medium saucepan, cook onion, stirring over low heat until softened.

  2. Add béchamel and cream; simmer, uncovered, stirring constantly, about 5 minutes or until soubise thickens. Stir in nutmeg.

Tip : If finished soubise is too thick, whisk in up to ¼ cup warm milk.
