Spinach And Nutmeg Velouté Sauce Recipe

 

This spinach and nutmeg velouté sauce goes well with roasted artichokes, grilled zucchini or stirred through pasta.

Ingredients :

preparation time 15 minutes
cooking time 15 minutes
makes 2 cups

  • 20g butter

  • 1 clove garlic, crushed

  • 1˝ cups (375ml) chicken velouté

  • 1/3 cup (80ml) cream

  • pinch nutmeg

  • ˝ teaspoon ground black pepper

  • 200g baby spinach, shredded finely

Method :

  1. Melt butter in medium saucepan, add garlic, cook, stirring, 1 minute.

  2. Add chicken velouté, stir over low heat for 5 minutes.

  3. Add cream, nutmeg and pepper, bring to a boil then reduce heat. Add spinach, simmer, stirring, 5 minutes.
