Sweet Red Bell Pepper & Tomato Soup Recipe

Ingredients :

Serves 4

  • 1 tbsp olive oil

  • 2 tbsp water

  • 2 red bell peppers, deseeded and finely chopped

  • 1 garlic clove, finely chopped

  • 1 onion, finely chopped

  • 14oz/400 g canned chopped tomatoes

  • 5 cups vegetable stock

  • salt and pepper

  • fresh basil leaves, to garnish

Healthy Easy Soups Recipe - Sweet Red Bell Pepper & Tomato Soup

Method :

  1. Put the oil, water, bell peppers, garlic, and onion in a pan, heat gently, and cook for 5-10 minutes, or until the vegetables have softened. Cover the pan and simmer for a further 10 minutes.

  2. Add the tomatoes, stock, salt, and pepper and simmer, uncovered, for 15 minutes.

  3. Serve garnished with basil leaves.
