Glazed Vegetable Kabobs Recipe

Ingredients :

Serves 4

  • 2/3 cup low-fat plain yogurt

  • 4 tbsp mango chutney

  • 1 tsp chopped garlic

  • 1 tbsp lemon juice

  • 8 baby onions, peeled

  • 16 baby corn, halved

  • 2 zucchini, cut into 1-inch / 2.5cm pieces

  • 16 white mushrooms

  • 16 cherry tomatoes

  • salt and pepper

  • salad greens, to garnish

Healthy Easy Vegetarian Recipe - Glazed Vegetable Kabobs

Method :

  1. If using wooden skewers, pre-soak them for 30 minutes to prevent burning under the broiler. Put the yogurt, chutney, garlic, lemon juice, salt, and pepper in a bow[ and stir together.

  2. Put the onions in a pan of boiling water. Return to a boil, then drain well.

  3. Thread the onions, corn, zucchini, mushrooms, and tomatoes alternately onto 8 metal or wooden skewers.

  4. Arrange the kabobs on a broiler pan and brush with the yogurt glaze. Cook under a preheated broiler for 10 minutes, turning and brushing frequently, until golden and tender.

  5. Serve with a garnish of mixed salad greens.
