Chocolate Apple Cake Recipe

This chocolate apple cake is gluten-free, wheat-free, yeast-free and dairy-free.

Ingredients :

Preparation & cook time: 1 hour 10 minutes (plus cooling)

Serves 18

  • 4 medium apples (600g)

  • ¾ cup (110g) potato flour

  • ¾ cup (120g) brown rice flour

  • ¼ cup (25g) cocoa powder

  • 1 cup (220g) caster sugar

  • 1 teaspoon bicarbonate of soda

  • ¼ cup (30g) linseed meal

  • 4 eggs, beaten lightly

  • 1 cup (250ml) vegetable oil

  • 1 teaspoon vanilla extract

chocolate icing:

  • 1 cup (160g) pure icing sugar

  • 1 tablespoon cocoa powder

  • 2 tablespoons apple juice, approximately

Wheat-Free & Gluten-Free Recipe - Chocolate Apple Cake

Method :

  1. Preheat oven to 180°C/160°C fan-forced, Grease 20cm x 30cm lamington pan; line base with baking paper, extending paper 5cm over long sides.

  2. Peel apples; grate coarsely. Chop grated apple finely.

  3. Sift dry ingredients into large bowl; stir in apple, meal, eggs, oil and extract, Pour mixture into pan.

  4. Bake cake about 45 minutes. Turn, top-side up, onto wire rack to cool.

  5. Meanwhile, make chocolate icing.
    To make chocolate icing,
    sift icing sugar and cocoa powder into small bowl; stir in enough juice to make a thick icing.

  6. Spread cold cake with chocolate icing.

Storage : Cake can be stored in an airtight container for up to three days. Un-iced cake is suitable to freeze for up to three months.

  • potato flour made from cooked potatoes that have been dried and ground.

  • brown rice flour is gluten-free flour made from ground brown rice; retains the outer bran layer of the grain, containing fiber and essential oils.

  • cocoa powder also called unsweetened cocoa. Dried, roasted, then ground cocoa beans (cacao seeds).

  • caster sugar is superfine or finely granulated table sugar.

  • bicarbonate of soda is also called baking or carb soda.

  • linseed meal is ground linseed (flax seeds). Available from health-food stores and in the health-food section of some supermarkets.

  • vanilla extract is vanilla beans that have been submerged in water. Vanilla essence is not a suitable substitute.

  • pure icing sugar is also known as confectioners' sugar or powdered sugar; has no added corn flour.
