This
chocolate apple cake is gluten-free, wheat-free, yeast-free and dairy-free.

4 medium apples (600g)

¾ cup (110g) potato flour

¾ cup (120g) brown rice flour
-
¼ cup (25g) cocoa powder
-
1 cup (220g) caster sugar
-
1 teaspoon bicarbonate of soda
-
¼ cup (30g) linseed meal
-
4 eggs, beaten lightly
-
1 cup (250ml) vegetable oil
-
1 teaspoon vanilla extract
chocolate icing:

1 cup (160g) pure icing sugar
-
1 tablespoon cocoa powder
-
2 tablespoons apple juice, approximately

Method :

Preheat oven to 180°C/160°C fan-forced, Grease
20cm x 30cm lamington pan; line base with baking paper,
extending paper 5cm over long sides.

Peel apples; grate coarsely. Chop grated apple
finely.

Sift dry ingredients into large bowl; stir in
apple, meal, eggs, oil and extract, Pour mixture into pan.

Bake cake about 45 minutes. Turn, top-side up,
onto wire rack to cool.

Meanwhile, make chocolate icing.
To make chocolate icing, sift icing sugar and cocoa powder
into small bowl; stir in enough juice to make a thick icing.

Spread cold cake with chocolate icing.

hot dry knife to cut the cake.
Storage : Cake can be stored in an airtight container for
up to three days. Un-iced cake is suitable to freeze for up
to three months. |

vanilla extract is
vanilla beans that have been submerged in water. Vanilla
essence is not a suitable substitute.
pure icing sugar is
also known as confectioners' sugar or powdered sugar; has
no added corn flour.
