Fruit Cake Recipe

This fruit cake recipe is gluten-free, wheat-free, yeast-free, dairy-free and nut-free.

Ingredients :

Preparation & cook time : 1 hour 30 minutes (plus cooling)

Makes 6

  • 1½ cups (240g) sultanas

  • 1 cup (150g) raisins, chopped coarsely

  • 1 cup (160g) dried currants

  • 2 tablespoons finely chopped mixed peel

  • 1/3 cup (75g) coarsely chopped glacé pineapple

  • 185g dairy-free spread

  • ¾ cup (165g) firmly packed brown sugar

  • 1/3 cup (80ml) brandy

  • 1/3 cup (80ml) water

  • 3 eggs

  • ¾ cup (135g) rice flour

  • ¾ cup (90g) soya flour

  • 3 teaspoons gluten-free baking powder

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground nutmeg

  • ½ teaspoon ground clove

  • 18 green glacé cherries, halved

  • 3 slices glacé pineapple, cut into wedges

Wheat-Free & Gluten-Free Recipe - Fruit Cake

Method :

  1. Line six 9cm-round cake pans with two thicknesses of baking paper, extending paper 5cm above side.

  2. Stir sultanas, raisins, currants, peel, chopped pineapple, spread, sugar, brandy and the water in medium saucepan over medium heat until spread is melted and sugar is dissolved; bring to the boil. Remove from heat; transfer to large heatproof bowl. Cool.

  3. Preheat oven to 150°C/130°C fan-forced.

  4. Stir eggs into fruit mixture then stir in sifted dry ingredients. Divide mixture among pans; decorate with cherries and pineapple wedges.

  5. Bake cakes about 1 hour 10 minutes. Cover hot cakes with foil; cool in pans overnight.

Baking Tip : When buying glacé fruit, check the ingredient label for signs of 'glucose made from wheat'. Glacé fruit is also available without glucose, making it gluten-free and wheat-free.
Storage : Cakes can be stored in an airtight container in the refrigerator for up to one month.

  • raisins are dried sweet grapes.

  • dried currants are tiny, almost black raisins.

  • dairy-free spread (dairy-free margarine) is a commercially produced margarine, free of dairy products.

  • brown sugar is soft, finely granulated sugar retaining molasses for color and flavor.

  • rice flour is a fine, almost powdery, gluten-free flour; made from ground white rice.

  • soya flour is made from ground soya beans.

  • baking powder is a raising agent; consists of two parts cream of tartar to one part bicarbonate of soda. Gluten-free baking powder is made without cereals.

  • cinnamon is dried inner bark of the shoots of the cinnamon tree; comes in sticks (quills) and ground.

  • cloves is dried flower buds of a tropical tree; can be used whole or ground. They have a strong scent and taste, so should be used sparingly.
