60g butter

½ cup (125ml) milk

½ teaspoon vanilla extract

¾ cup (165g) caster sugar

½ cup (90g) rice flour

1/3
cup (40g) soya flour

cup (45g) gluten-free self-raising flour

1 teaspoon gluten-free baking powder

2 tablespoons cocoa powder

2 teaspoons finely grated orange rind

½ cup (110g) firmly packed brown sugar

2 cups (500ml) boiling water

Method :

Preheat oven to 180°C/160°C fan forced. Grease
1.5-liter (6-cup) ovenproof dish.

Melt butter with milk and extract in medium
saucepan. Remove from heat; whisk in caster sugar, then sifted
flours, baking powder, half the cocoa and rind. Spread mixture
into dish.

Sift brown sugar and the remaining cocoa over
mixture; gently pour the boiling water over mixture.

Bake pudding about 40 minutes. Stand 5 minutes
before serving.

butter : 125g is equal to one stick (4 ounces)
butter. Unsalted butter often called "sweet" butter as it
has no added salt. The salt content of regular salted
butter is sometimes discernable in a sweet recipe,
especially with chocolate. You can use regular butter in
most cakes and baking, but it's advisable to stick to
unsalted butter when it's specified in delicate toppings,
icings and so on.
vanilla extract is
vanilla beans that have been submerged in water. Vanilla
essence is not a suitable substitute.
caster sugar is
superfine or finely granulated table sugar.
rice flour is a fine, almost powdery, gluten-free
flour; made from ground white rice.
soya flour is made
from ground soya beans.
self-raising flour
is plain flour mixed with baking powder in the proportion
of 1 cup flour to 2 teaspoons baking powder. Also
available gluten-free from most supermarkets.
baking powder is a
raising agent; consists of two parts cream of tartar to
one part bicarbonate of soda. Gluten-free baking powder
is made without cereals.
cocoa
powder also called unsweetened cocoa. Dried, roasted,
then ground cocoa beans (cacao seeds).
brown sugar is soft,
finely granulated sugar retaining molasses for color and
flavor.
