This
passion fruit kisses recipe is gluten-free, wheat-free, yeast-free and
dairy-free.

½ cup (110g) caster sugar

¾ cup (110g) (corn) corn flour

2 tablespoons pure icing sugar

Method :

Preheat oven to 180°C/160°C fan-forced. Grease
four 12-hole (1½-tablespoons/30ml) round-based patty pans.

Beat eggs in small bowl with electric mixer
until thick and creamy. Add caster sugar, one tablespoon at a
time, beating until sugar dissolves between additions. Gently
fold in triple-sifted corn flour. Drop one level tablespoon of
mixture into each pan hole.

Bake cakes about 10 minutes. Turn cakes
immediately onto baking-paper-covered wire rack (tap pans
upside-down firmly on bench to release cakes, if necessary);
cool.

Meanwhile, make passion fruit filling. To
make passion fruit filling, beat dairy-free spread in small
bowl with electric mixer until as white as possible; gradually
beat in sifted icing sugar. Stir in passion fruit.

Sandwich cold kisses with passion fruit filling;
serve dusted with sifted icing sugar.
