Carrot, Celeriac & Sesame Seed Salad Recipe

Ingredients :

Serves 6

  • 225g / 8oz celeriac

  • 225g / 8oz carrots, peeled

  • 50g / 2oz seedless raisins

  • 2 tbsp sesame seeds

  • freshly chopped parsley, to garnish

    For the lemon & chili dressing :

  • grated rind of 1 lemon

  • 4 tbsp lemon juice

  • 2 tbsp sunflower oil

  • 2 tbsp clear honey

  • 1 red bird's-eye chili, deseeded and finely chopped

  • freshly ground black pepper

Treating High Blood Pressure Recipe - Carrot, Celeriac & Sesame Seed Salad

Method :

  1. Slice the celeriac into thin matchsticks. Place in a small saucepan of boiling salted water and boil for 2 minutes.

  2. Drain and rinse the celeriac in cold water and place in a mixing bowl.

  3. Finely grate the carrot. Add the carrot and the raisins to the celeriac in the bowl.

  4. Place the sesame seeds under a hot grill or dry-fry in a frying pan for 1-2 minutes until golden brown, then leave to cool.

  5. Make the dressing by whisking together the lemon rind, lemon juice, oil, honey, chili and seasoning or by shaking thoroughly in a screw-topped jar.

  6. Pour 2 tablespoons of the dressing over the salad and toss well. Turn into a serving dish and sprinkle over the toasted sesame seeds and chopped parsley. Serve the remaining dressing separately.
